That’s a really good point! Reminds me of all the cardboardy Kashi granola bars I have eaten.

If not stored properly, the grains will oxidize. They need to be kept in packaging that excludes oxygen, since it one of the reactants needed to start oxidizing the fat. Light and heat should also be limited since they speed up fat oxidation.
