I’ve done some product development using salts other than NaCl, but like you said you have to be very careful about off-flavors. From what I’ve seen, NaCl is the only salt that truly tastes “clean” to us.

I thought the three approaches in the piece were interesting because it wasn’t just mixing and matching different salts together! Some really fun research!
