I’ve been to a farm here in The Netherlands where the farmer also thinks more about animal health and makes raw milk cheese right on the farm too! He’s also very creative when the cheese ripening goes totally wrong and has sold it as fondue when needing to cover up some bad flavors. He claims restaurants are begging him for his most aged cheese but with raw milk too often the wrong microrganism takes over.
